Description
Buffalo Chicken Taquitos are crispy, cheesy, and packed with shredded chicken and buffalo flavor, perfect for appetizers or a quick dinner.
Ingredients
- 2 cups shredded cooked chicken
- 6โ8 corn tortillas
- 1/2 cup buffalo sauce
- 1/4 cup plain Greek yogurt
- 2 tbsp green onion, chopped
- 1/4 cup red onion, diced
- 1 cup shredded cheddar cheese
- 1/2 tsp garlic powder
- 1/2 tsp sea salt, to taste
- 2 tbsp melted butter
Instructions
- Preheat oven to 400ยฐF (200ยฐC).
- In a bowl, combine shredded chicken, buffalo sauce, Greek yogurt, green onion, red onion, cheddar cheese, garlic powder, and sea salt.
- Warm tortillas slightly to make them pliable. Spoon chicken mixture onto each tortilla and roll tightly.
- Place taquitos seam-side down on a baking sheet lined with parchment paper.
- Brush tops with melted butter.
- Bake 15โ20 minutes until golden and crispy.
- Serve with ranch or blue cheese dressing for dipping.
Notes
- Use corn tortillas for authentic flavor or flour tortillas for softer taquitos.
- Adjust buffalo sauce for preferred spice level.
- Leftovers can be stored in the fridge and reheated in the oven for crispiness.
