Description

Buffalo Chicken Taquitos are crispy, cheesy, and packed with shredded chicken and buffalo flavor, perfect for appetizers or a quick dinner.


Ingredients

  • 2 cups shredded cooked chicken
  • 6โ€“8 corn tortillas
  • 1/2 cup buffalo sauce
  • 1/4 cup plain Greek yogurt
  • 2 tbsp green onion, chopped
  • 1/4 cup red onion, diced
  • 1 cup shredded cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt, to taste
  • 2 tbsp melted butter


Instructions

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. In a bowl, combine shredded chicken, buffalo sauce, Greek yogurt, green onion, red onion, cheddar cheese, garlic powder, and sea salt.
  3. Warm tortillas slightly to make them pliable. Spoon chicken mixture onto each tortilla and roll tightly.
  4. Place taquitos seam-side down on a baking sheet lined with parchment paper.
  5. Brush tops with melted butter.
  6. Bake 15โ€“20 minutes until golden and crispy.
  7. Serve with ranch or blue cheese dressing for dipping.
