Description
Buffalo Chicken Bowls are a quick and flavorful meal featuring bite-sized chicken coated in hot sauce and butter, served over rice with fresh vegetables, shredded cheese, and your choice of ranch or blue cheese dressing.
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- ½ cup hot sauce (such as Frank’s RedHot)
- ¼ cup unsalted butter, melted
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 cups cooked rice (white or brown)
- 1 cup shredded lettuce
- 1 cup cherry tomatoes, halved
- ½ cup shredded cheddar cheese
- ¼ cup ranch or blue cheese dressing
- ¼ cup thinly sliced green onions
- Optional: sliced avocado, for topping
Instructions
- In a large skillet, heat olive oil over medium heat and cook chicken pieces until fully cooked.
- Add melted butter and hot sauce to the chicken, stirring to coat evenly.
- Divide cooked rice into bowls. Top each bowl with buffalo chicken, shredded lettuce, cherry tomatoes, cheddar cheese, and green onions.
- Drizzle with ranch or blue cheese dressing. Add sliced avocado if desired.
- Serve immediately and enjoy!
Notes
- Use rotisserie chicken for a faster version.
- Adjust the amount of hot sauce to control spice level.
- Leftovers can be stored in the fridge for up to 2 days; add dressing just before serving.
