Description

Buffalo Chicken Bowls are a quick and flavorful meal featuring bite-sized chicken coated in hot sauce and butter, served over rice with fresh vegetables, shredded cheese, and your choice of ranch or blue cheese dressing.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • ½ cup hot sauce (such as Frank’s RedHot)
  • ¼ cup unsalted butter, melted
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 cups cooked rice (white or brown)
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes, halved
  • ½ cup shredded cheddar cheese
  • ¼ cup ranch or blue cheese dressing
  • ¼ cup thinly sliced green onions
  • Optional: sliced avocado, for topping


Instructions

  1. In a large skillet, heat olive oil over medium heat and cook chicken pieces until fully cooked.
  2. Add melted butter and hot sauce to the chicken, stirring to coat evenly.
  3. Divide cooked rice into bowls. Top each bowl with buffalo chicken, shredded lettuce, cherry tomatoes, cheddar cheese, and green onions.
  4. Drizzle with ranch or blue cheese dressing. Add sliced avocado if desired.
  5. Serve immediately and enjoy!

  • Use rotisserie chicken for a faster version.
