Ingredients

  • 1 1/2 cups blueberries, fresh or frozen
  • 1/2 cup almond milk
  • 2 large eggs
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1/2 tsp cinnamon, ground
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 tbsp chia seeds
  • 1/4 cup nuts
  • 1 cooking spray or butter
  • 2 cups low-fat cottage cheese


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and grease a 8×8-inch baking dish with cooking spray or butter.
  2. In a large bowl, whisk together eggs, almond milk, honey (or maple syrup), vanilla extract, cinnamon, and salt.
  3. Fold in cottage cheese, rolled oats, chia seeds, and nuts until combined.
  4. Gently fold in blueberries.
  5. Pour mixture into prepared baking dish and spread evenly.
  6. Bake for 35-40 minutes until the top is set and slightly golden.
  7. Allow to cool slightly before serving. Enjoy warm or chilled.
