Description
Beef and Cheese Chimichangas are crispy, golden, and packed with seasoned ground beef, refried beans, and melted cheese. Perfect for a fun Mexican-inspired dinner or snack that the whole family will love.
Ingredients
- 1 lb ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning (or homemade)
- ยฝ cup salsa
- 1 cup refried beans
- 1 ยฝ cups shredded cheddar cheese or Mexican blend
- 6 large flour tortillas, burrito-size
- 2 tablespoons vegetable oil for brushing/frying
Instructions
- In a skillet over medium heat, cook ground beef, diced onion, and garlic until beef is browned and onion is tender. Drain excess fat.
- Add taco seasoning and salsa, stirring until well combined.
- Remove from heat and stir in refried beans and shredded cheese.
- Place a generous scoop of filling in the center of each tortilla. Fold in sides and roll tightly to form chimichangas.
- Brush each chimichanga with vegetable oil. Optionally, bake at 400ยฐF (200ยฐC) for 15โ20 minutes until golden and crispy, or fry in oil until golden brown.
- Serve warm with salsa, sour cream, or guacamole.
Notes
- Use store-bought or homemade tortillas depending on preference.
- Extra fillings like diced peppers or corn can be added for variety.
- Leftovers can be stored in the refrigerator for up to 2 days; reheat before serving.
