Description

Beef and Cheese Chimichangas are crispy, golden, and packed with seasoned ground beef, refried beans, and melted cheese. Perfect for a fun Mexican-inspired dinner or snack that the whole family will love.


Ingredients

  • 1 lb ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning (or homemade)
  • ยฝ cup salsa
  • 1 cup refried beans
  • 1 ยฝ cups shredded cheddar cheese or Mexican blend
  • 6 large flour tortillas, burrito-size
  • 2 tablespoons vegetable oil for brushing/frying


Instructions

  1. In a skillet over medium heat, cook ground beef, diced onion, and garlic until beef is browned and onion is tender. Drain excess fat.
  2. Add taco seasoning and salsa, stirring until well combined.
  3. Remove from heat and stir in refried beans and shredded cheese.
  4. Place a generous scoop of filling in the center of each tortilla. Fold in sides and roll tightly to form chimichangas.
  5. Brush each chimichanga with vegetable oil. Optionally, bake at 400ยฐF (200ยฐC) for 15โ€“20 minutes until golden and crispy, or fry in oil until golden brown.
  6. Serve warm with salsa, sour cream, or guacamole.
