Description
Beef and Cheese Chimichangas are crispy, golden fried tortillas stuffed with seasoned ground beef, refried beans, cheese, and a flavorful mix of onions, garlic, and salsa. Perfect for a quick Mexican-inspired dinner.
Ingredients
- 1 lb ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning or homemade
- ½ cup salsa
- 1 cup refried beans
- 1 ½ cups shredded cheddar cheese or Mexican blend
- 6 large flour tortillas, burrito-size
- 2 Tbsp vegetable oil for brushing/frying
Instructions
- Preheat oven to 400°F (200°C) or prepare a skillet with vegetable oil for frying.
- In a skillet over medium heat, cook ground beef with onion and garlic until browned. Drain excess fat.
- Add taco seasoning and salsa to beef mixture and stir until well combined.
- Lay out a tortilla, spread refried beans, then beef mixture, and top with cheese. Fold sides and roll tightly.
- Optional: Brush with oil and bake 15–20 minutes or shallow-fry until golden and crispy.
- Serve hot with sour cream, guacamole, or salsa.
Notes
- For extra crispiness, deep fry instead of baking.
- Can use store-bought or homemade taco seasoning.
- Leftovers can be stored in the fridge for up to 2 days and reheated in the oven.
