Description

Beef and Cheese Chimichangas are crispy, golden fried tortillas stuffed with seasoned ground beef, refried beans, cheese, and a flavorful mix of onions, garlic, and salsa. Perfect for a quick Mexican-inspired dinner.


Ingredients

  • 1 lb ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning or homemade
  • ½ cup salsa
  • 1 cup refried beans
  • 1 ½ cups shredded cheddar cheese or Mexican blend
  • 6 large flour tortillas, burrito-size
  • 2 Tbsp vegetable oil for brushing/frying


Instructions

  1. Preheat oven to 400°F (200°C) or prepare a skillet with vegetable oil for frying.
  2. In a skillet over medium heat, cook ground beef with onion and garlic until browned. Drain excess fat.
  3. Add taco seasoning and salsa to beef mixture and stir until well combined.
  4. Lay out a tortilla, spread refried beans, then beef mixture, and top with cheese. Fold sides and roll tightly.
  5. Optional: Brush with oil and bake 15–20 minutes or shallow-fry until golden and crispy.
  6. Serve hot with sour cream, guacamole, or salsa.

Notes

  • For extra crispiness, deep fry instead of baking.
  • Can use store-bought or homemade taco seasoning.
  • Leftovers can be stored in the fridge for up to 2 days and reheated in the oven.
