Description
This One-Pan Honey BBQ Chicken and Rice is a flavorful, easy-to-make weeknight dinner. Juicy chicken thighs simmer with rice, veggies, and a sweet and tangy honey BBQ sauce for a comforting, crowd-pleasing meal.
Ingredients
- 2 lbs boneless skinless chicken thighs
- 1 avocado, sliced
- 1 cup black beans, drained
- 1 cup corn kernels
- 2 green onions, chopped
- 3/4 tsp onion powder
- 1 1/2 tsp garlic powder
- 4 cups chicken broth
- 1 tbsp Dijon mustard
- 1/2 cup honey
- 1 cup honey BBQ sauce
- 1 cup ketchup
- 2 tbsp Worcestershire sauce
- 2 cups long-grain white rice
- 1/4 tsp cayenne pepper
- 3/4 tsp chili powder
- 2 tsp smoked paprika
- 1/2 tsp salt
- Black pepper, to taste
- 1 tbsp butter or olive oil
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 1 cup cheddar cheese, shredded
- Sesame seeds for garnish
Instructions
- Preheat a large skillet or pan over medium heat. Add olive oil and sear chicken thighs until golden brown, about 4โ5 minutes per side. Remove and set aside.
- In the same pan, add butter, onion powder, garlic powder, and seasonings. Stir to combine.
- Add rice, chicken broth, honey, BBQ sauce, ketchup, Worcestershire sauce, and apple cider vinegar. Mix well.
- Return chicken to the pan. Cover and simmer for 20โ25 minutes until rice is cooked and chicken is fully cooked through.
- Stir in black beans, corn, and top with cheddar cheese. Cover briefly to melt the cheese.
- Garnish with avocado slices, green onions, and sesame seeds. Serve warm.
Notes
- Use leftover cooked chicken to save time.
- Adjust honey and BBQ sauce to taste for sweeter or spicier flavors.
- Can be made in advance and reheated; the rice may absorb more liquid, so add a splash of broth if needed.
