Description

This One-Pan Honey BBQ Chicken and Rice is a flavorful, easy-to-make weeknight dinner. Juicy chicken thighs simmer with rice, veggies, and a sweet and tangy honey BBQ sauce for a comforting, crowd-pleasing meal.


Ingredients

  • 2 lbs boneless skinless chicken thighs
  • 1 avocado, sliced
  • 1 cup black beans, drained
  • 1 cup corn kernels
  • 2 green onions, chopped
  • 3/4 tsp onion powder
  • 1 1/2 tsp garlic powder
  • 4 cups chicken broth
  • 1 tbsp Dijon mustard
  • 1/2 cup honey
  • 1 cup honey BBQ sauce
  • 1 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 2 cups long-grain white rice
  • 1/4 tsp cayenne pepper
  • 3/4 tsp chili powder
  • 2 tsp smoked paprika
  • 1/2 tsp salt
  • Black pepper, to taste
  • 1 tbsp butter or olive oil
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 cup cheddar cheese, shredded
  • Sesame seeds for garnish


Instructions

  1. Preheat a large skillet or pan over medium heat. Add olive oil and sear chicken thighs until golden brown, about 4โ€“5 minutes per side. Remove and set aside.
  2. In the same pan, add butter, onion powder, garlic powder, and seasonings. Stir to combine.
  3. Add rice, chicken broth, honey, BBQ sauce, ketchup, Worcestershire sauce, and apple cider vinegar. Mix well.
  4. Return chicken to the pan. Cover and simmer for 20โ€“25 minutes until rice is cooked and chicken is fully cooked through.
  5. Stir in black beans, corn, and top with cheddar cheese. Cover briefly to melt the cheese.
  6. Garnish with avocado slices, green onions, and sesame seeds. Serve warm.

  • Use leftover cooked chicken to save time.
  • Adjust honey and BBQ sauce to taste for sweeter or spicier flavors.
  • Can be made in advance and reheated; the rice may absorb more liquid, so add a splash of broth if needed.
