Description

These Barbecue Chicken Tostadas are a quick and flavorful meal featuring crispy tostada shells topped with shredded BBQ chicken, melty cheese, and optional green onions. Perfect for lunch or dinner.


Ingredients

  • 8 tostada shells or 8 corn tortillas, brushed lightly with olive oil and baked 3-5 minutes per side until crispy
  • 3 cups cooked and shredded chicken
  • 1 ยฝ cups of your favorite barbecue sauce, divided
  • 2 cups shredded cheese (mozzarella, cheddar, Monterey Jack, or a blend)
  • 3 green onions, very thinly sliced (optional)


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) if not already done for tortillas.
  2. In a bowl, mix shredded chicken with 1 cup barbecue sauce until evenly coated.
  3. Top each crispy tostada shell with the BBQ chicken mixture, then sprinkle with shredded cheese.
  4. Bake in the oven for 5-7 minutes until cheese is melted and bubbly.
  5. Remove from oven and drizzle with remaining barbecue sauce.
  6. Garnish with thinly sliced green onions if desired, then serve immediately.
