Description

Bang Bang Fried Rice is a flavorful twist on classic fried rice, featuring diced chicken, fresh veggies, and a creamy, spicy bang bang sauce that elevates this quick and easy meal.


Ingredients

  • 1 ยฝ cups cooked rice (preferably day-old)
  • 1 chicken breast, diced
  • 2 eggs, beaten
  • ยฝ cup diced carrots
  • โ…“ cup green peas
  • 2 cloves garlic, minced
  • 2 green onions, sliced (for garnish)
  • 2โ€“3 tbsp soy sauce
  • 1 tbsp oil (plus more as needed)
  • ยผ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp Sriracha (adjust to taste)
  • 1 tsp rice vinegar


Instructions

  1. In a small bowl, mix mayonnaise, sweet chili sauce, Sriracha, and rice vinegar to make the bang bang sauce. Set aside.
  2. Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add diced chicken and cook until fully cooked, about 5โ€“6 minutes. Remove chicken and set aside.
  3. In the same skillet, add a little more oil if needed. Sautรฉ garlic until fragrant, then add carrots and peas. Cook 2โ€“3 minutes.
  4. Push vegetables to the side, pour in beaten eggs, and scramble until just set.
  5. Add cooked rice and cooked chicken to the skillet. Pour soy sauce over and stir everything together until evenly combined and heated through.
  6. Remove from heat, drizzle with prepared bang bang sauce, and toss to coat.
  7. Garnish with sliced green onions and serve immediately.

Notes

  • Day-old rice works best as it prevents the dish from being mushy.
  • Adjust Sriracha according to your preferred spice level.
  • Add other vegetables like bell peppers or corn for more color and flavor.
