Description
Bang Bang Fried Rice is a flavorful twist on classic fried rice, featuring diced chicken, fresh veggies, and a creamy, spicy bang bang sauce that elevates this quick and easy meal.
Ingredients
- 1 ยฝ cups cooked rice (preferably day-old)
- 1 chicken breast, diced
- 2 eggs, beaten
- ยฝ cup diced carrots
- โ cup green peas
- 2 cloves garlic, minced
- 2 green onions, sliced (for garnish)
- 2โ3 tbsp soy sauce
- 1 tbsp oil (plus more as needed)
- ยผ cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp Sriracha (adjust to taste)
- 1 tsp rice vinegar
Instructions
- In a small bowl, mix mayonnaise, sweet chili sauce, Sriracha, and rice vinegar to make the bang bang sauce. Set aside.
- Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add diced chicken and cook until fully cooked, about 5โ6 minutes. Remove chicken and set aside.
- In the same skillet, add a little more oil if needed. Sautรฉ garlic until fragrant, then add carrots and peas. Cook 2โ3 minutes.
- Push vegetables to the side, pour in beaten eggs, and scramble until just set.
- Add cooked rice and cooked chicken to the skillet. Pour soy sauce over and stir everything together until evenly combined and heated through.
- Remove from heat, drizzle with prepared bang bang sauce, and toss to coat.
- Garnish with sliced green onions and serve immediately.
Notes
- Day-old rice works best as it prevents the dish from being mushy.
- Adjust Sriracha according to your preferred spice level.
- Add other vegetables like bell peppers or corn for more color and flavor.
