Ingredients

  • 2 cups cooked chicken, shredded
  • 4 oz cream cheese, softened
  • ยฝ cup shredded cheddar cheese
  • ยผ cup salsa
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 10 small flour or corn tortillas
  • Cooking spray or olive oil for brushing


Instructions

  1. Preheat oven to 425ยฐF (220ยฐC) and lightly grease a baking sheet with cooking spray.
  2. In a bowl, mix shredded chicken, cream cheese, cheddar cheese, salsa, garlic powder, onion powder, cumin, salt, and pepper until well combined.
  3. Warm tortillas slightly to make them pliable, then spoon 2โ€“3 tablespoons of filling onto each tortilla and roll tightly.
  4. Place rolled taquitos seam side down on the baking sheet. Lightly brush or spray with olive oil.
  5. Bake for 15โ€“20 minutes, or until golden brown and crispy.
  6. Serve warm with salsa, sour cream, or guacamole for dipping.

Notes

  • Flour tortillas are easier to roll, but corn tortillas give a more authentic flavor.
