Ingredients
- Base:
1 cup cottage cheese (lactose-free if needed)
4 large eggs

1 teaspoon garlic powder (or fresh minced garlic)
1 teaspoon paprika (smoked paprika optional)

Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- In a large bowl, whisk together cottage cheese, eggs, Parmesan cheese, chives, garlic powder, paprika, salt, and pepper until smooth.
- Fold in bell peppers, spinach, and sun-dried tomatoes if using.
