Ingredients
- 2 cups cottage cheese
- 3 large eggs
- 1 large apple, peeled and finely diced
- 1/2 cup rolled oats or almond flour
- 1/4 cup maple syrup or honey
- 1 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 tsp baking powder
Instructions
- Preheat oven to 350ยฐF (175ยฐC) and lightly grease a baking dish.
- In a large bowl, whisk together cottage cheese, eggs, maple syrup, and vanilla extract until smooth.
- Fold in diced apple, oats or almond flour, cinnamon, and baking powder until evenly combined.
- Pour mixture into prepared baking dish and smooth the top.
- Bake for 35โ40 minutes, or until the top is golden and a toothpick inserted comes out clean.
- Allow to cool slightly before serving. Enjoy warm!
