Description

This Amish-Style Apple and Cinnamon Baked Oatmeal is a wholesome, cozy breakfast. Rolled oats are baked with sweet apples, warm spices, and a rich custard for a comforting start to your day.


Ingredients

  • 3 cups old-fashioned rolled oats
  • 1ยฝ tsp baking powder
  • 2 tsp ground cinnamon
  • ยผ tsp ground nutmeg
  • ยพ tsp salt
  • ยฝ cup lightly packed brown sugar
  • 2ยฝ cups milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 4 tbsp melted butter or coconut oil
  • 2-3 large apples, peeled and diced (Honeycrisp or Gala)


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and lightly grease a 9×13-inch baking dish.
  2. In a large bowl, mix oats, baking powder, cinnamon, nutmeg, salt, and brown sugar.
  3. In another bowl, whisk together milk, eggs, vanilla, and melted butter or coconut oil.
  4. Add wet ingredients to dry ingredients and stir until combined. Fold in diced apples.
  5. Pour mixture into prepared baking dish and smooth the top.
  6. Bake for 40-45 minutes until the oatmeal is set and lightly golden.
  7. Allow to cool slightly before serving. Optional: drizzle with maple syrup or sprinkle with extra cinnamon.

Notes

  • Choose firm apples that hold their shape when baked.
  • This casserole can be made the night before and baked fresh in the morning.
